Touhou 6, 7, and 8 were a kind of rebirth of the series, and the first games released on Windows. They introduce most of the current popular characters, and their difficulty is relatively low. It's an excellent beginner's trilogy before you move on further into the series.
1 through 5 are prior to a timeskip that happens because of plot reasons at the end of 5. They set up the basics of the setting and establish a few character relationships (Marisa was originally a boss, not a playable character), but they're largely non-essential and only a very few characters from it make popular appearances elsewhere.
