I do like chicken thighs and I very often curry them but are there any other ways to use them, particularly for batch cooking?

Chopped the onions but as you notice, they are different sizes.
The smaller bits sweat down quickly but the larger bits still retain some texture. Sometimes I hold back on a portion of onions and add later on, for a bit of 'raw onion crunch'.

A few spices are added to hot ghee(if you can get it, use it - it makes all the difference).
Mustard seeds, cumin seeds, cloves and my biggest mistake was not to crush the Cardamon pods but - hey ho!

I tend to include peppers a little later on in the cooking as I like the texture and to finish off, I do cheat a little and add a commercial sauce.
I do cheat quite a bit, even if I am making a chicken casserole I usually add a tin of condensed Mushroom soup?.
